Faster recursive exclusion glob patterns

Recursive exclusion patterns like Documentation/internal/**/* no longer expand into the full set of excluded paths before filtering. Tuist now collapses those patterns to their directory root, so file and resource mappers can skip excluded subtrees without enumerating them. This makes manifest loading faster when projects use broad recursive exclusion globs.
