Add Xcode 26.0.1 runner profile

The Helm chart now provisions an additional macOS runner profile for Xcode 26.0.1 alongside the existing 26.5, 26.4.1, and 26.3 profiles. Xcode 26.5 remains the default profile, while 26.0.1 is registered as a cold pool (minWarmPoolFloor: 0) with maxReplicas set per environment (1 in canary/staging, 9 in production). Restores a 26.0.x toolchain to the self-hosted tuist-macos fleet so workloads pinned to Xcode 26.0 can run on the self-hosted runners instead of the GitHub-hosted macos-26 runner.
