Add Xcode 26.0.1 runner profile

Tuist’s self-hosted macOS runner fleet now offers a build profile for Xcode 26.0.1, alongside the existing 26.5, 26.4.1, and 26.3 profiles. The new profile is added as an additional (non-default) option, so the default profile stays Xcode 26.5. A matching new pool (<prefix>-runner-pool-macos-26-0-1) is rendered in the Helm catalog and server config, with cold autoscaling (floor 0, max 1 in canary/staging, 9 in production). This brings a 26.0.x toolchain back to the fleet so jobs pinning Xcode 26.0 can move onto the self-hosted runners.
