[[apple.simulator_app]] target shape with platform attribute

Apple simulator targets are now declared as [[apple.simulator_app]] with a platform = "ios" attribute. The previous [[apple.ios_app]] shape remains accepted for compatibility, so existing manifests continue to work while projects migrate to the new, platform-aware form.
