Add Xcode 26.0.1 runner profile to the macOS fleet

Tuist’s self-hosted macOS runner fleet now includes Xcode 26.0.1 as an available profile, alongside the existing 26.5, 26.4.1, and 26.3 options. The 26.0.1 profile is non-default, with a cold-pool configuration (floor 0) sized at 1 replica in canary/staging and 9 in production. This restores a 26.0.x toolchain to the fleet, enabling CLI release builds that pin Xcode 26.0 to keep running on the self-hosted infrastructure.
