Generic Helm chart for self-hosting

The Helm chart is now generic and can be used by anyone to self-host Hive. Default values no longer assume Tuist-specific hosts, image pull secrets, External Secrets Operator, or S3 backups. A new secrets.existingSecret value lets operators point to their own Kubernetes Secret. Tuist’s production configuration is moved into a separate values-production.yaml overlay.
