CLI releases are now distributed through canary, RC, and stable channels

The CLI now publishes three release channels. Main builds become canary prereleases, release candidates soak on a dedicated branch, and stable releases are promoted only after soaking. The recommended install stays on stable, while early adopters can opt into canary or RC builds. A new docs page explains the channel model and pinning strategy.
