Generic Helm chart split from Tuist production overlay

The Helm chart is now generic by default. Tuist-specific values (hostname, image pull secret, External Secrets Operator hooks, and storage class) were moved into a separate values-production.yaml overlay. You can deploy the same chart with your own host, secrets.existingSecret, and OIDC settings, making self-hosting easier without Tuist-specific assumptions.
